Saccharomyces cerevisiae is a single-celled, eukaryotic fungus, famously known as Baker's Yeast or Brewer's Yeast. It is one of the most thoroughly studied and widely utilized microorganisms in the world. In animal nutrition, it is valued not only for its protein and B-vitamin content but, more importantly, for its probiotic and prebiotic effects when used as a live culture. Its ability to remain metabolically active yet not proliferate extensively in the animal's gut makes it a safe and effective additive.
