Tween (common name: polysorbate) is a nonionic surfactant, with the chemical name of polyoxyethylene sorbitol fatty acid ester. It is mainly produced by dehydrating sorbitol to form dehydrated sorbitose, which is then esterified with fatty acids and added with ethylene oxide. It is a pale yellow to amber viscous liquid with an unpleasant odor. Its pH value is approximately 6-8 (5% aqueous solution), and its flash point is 149ºC. It is stable to weak acids and weak bases but is prone to saponification in strong acids and bases. It should be stored in a sealed container away from light to prevent oxidation. This substance, due to the hydrophilicity of polyoxyethylene, is widely used as a non-toxic and non-irritating material in emulsifiers, solubilizers and wetting agents.
